Senior Pastry Chef – Portuguese Baking Experience

For a client of ours, we are looking for an experienced Senior Pastry Chef to join their
production team in Rotterdam. The ideal candidate should have hands-on experience in
Portuguese baking and traditional pastry, especially products such as pastéis de nata, brioche,
puff pastry, cakes, doughs, fillings, and toppings.
This role is suitable for a skilled and reliable pastry professional who can work in a fast-paced
bakery production environment while maintaining high standards of hygiene, quality,
consistency, and teamwork.
Job Overview
The Senior Pastry Chef will be responsible for preparing, assembling, baking, and finishing
pastry products according to company recipes and quality standards. This position requires
strong pastry production experience, attention to detail, and the ability to support smooth daily
bakery operations.
Responsibilities:
- Prepare doughs, fillings, toppings, and pastry products according to company recipes.
- Work with brioche dough, puff pastry, cakes, and traditional pastry items.
- Prepare and produce Portuguese bakery items, including pastéis de nata and related pastries.
- Assemble, bake, and finish products while maintaining consistent quality.
- Support daily mise-en-place and ingredient restocking.
- Ensure products meet company standards for taste, appearance, and consistency.
- Maintain cleanliness and organization of the workstation.
- Follow hygiene, food safety, and HACCP standards.
- Ensure proper handling, storage, and use of ingredients.
- Support a clean, safe, and efficient production environment.
- Work closely with the Chef and production team.
- Support smooth daily bakery production in a fast-paced environment.
- Follow production schedules, recipes, and company procedures.
- Demonstrate responsibility, punctuality, reliability, and team spirit.
