We’ve recently expanded our kitchen offering with a dedicated sushi section, adding fresh, refined dishes alongside our grill concept. This is an exciting opportunity to be part of building something new within an already established and high-energy restaurant.
About the Role – Sushi Chef (Junior/Medior Level)
We are looking for a motivated Sushi Chef with some prior experience and a strong willingness to learn and grow. You don’t need to be a master sushi chef yet—but you should have a solid foundation in sushi preparation and a passion for developing your skills in a professional kitchen environment.
You’ll work closely with our kitchen team to prepare fresh sushi items, maintain consistency, and help shape this new part of the CAU experience.
Key Responsibilities
- Prepare sushi dishes (rolls, nigiri, sashimi, etc.) to a consistent standard
- Work with fresh fish, rice, and Japanese ingredients with care and precision
- Maintain high food safety, hygiene, and HACCP standards
- Support mise-en-place and daily prep for sushi service
- Ensure clean, organised, and efficient workstation at all times
- Collaborate with grill and kitchen team for smooth service flow
- Learn and develop new sushi techniques within the team
What We’re Looking For
- Some prior experience working with sushi or Japanese cuisine (basic to intermediate level)
- Strong interest in learning and improving sushi skills
- Good attention to detail and presentation
- Able to work efficiently in a busy, high-energy kitchen
- Team player with a positive and hands-on attitude
- Comfortable in a fast-paced restaurant environment
- English communication skills required (Dutch is a bonus)
- Valid work authorization for the Netherlands
