### About us
Mr.sushi Maastricht is a Japanese sushi and grill restaurant located in Maastricht. We specialise in takeaway and delivery dishes, including sushi, Japanese dishes and Asian-style specialities. To maintain the stability, quality and continuity of our kitchen operations, we are looking for an experienced sous chef / all-round cook with knowledge of Japanese cuisine.
### Job description
As a sous chef / all-round cook, you will support the daily kitchen operations and help ensure that all dishes are prepared efficiently, safely and to a consistent quality standard. You will be involved in preparation, cooking, sushi production, quality control and maintaining a clean and organised kitchen.
### Main responsibilities
* Preparing ingredients, mise en place and basic kitchen products
* Preparing sushi, rice, fish, warm dishes and side dishes
* Checking the quality, freshness and presentation of dishes
* Supporting the daily planning and organisation of the kitchen
* Following hygiene, food safety and HACCP standards
* Assisting during busy takeaway and delivery service periods
* Maintaining a clean, safe and efficient working environment
### Requirements
* Proven experience as a cook, all-round cook, sous chef or sushi chef
* Experience with Japanese cuisine and sushi preparation is required
* Knowledge of cutting techniques, rice preparation, fish handling and food presentation
* Ability to work independently in a small kitchen team
* Reliable, responsible and able to work under pressure
* Willingness to work according to hygiene and food safety regulations
* Availability on the restaurant’s opening days
* Basic knowledge of English or Chinese is preferred
### Working hours
The restaurant is open on Monday, Wednesday, Thursday, Friday, Saturday and Sunday from 15:15 to 20:15. Exact working hours will be agreed together.
